# Homemade Khinkali Recipe
Khinkali are traditional Georgian dumplings filled with meat and spices. This recipe yields about 20-25 dumplings.
## Ingredients
### For the dough:
- 3 cups all-purpose flour
- 1 tsp salt
- 1 cup warm water
- 1 tbsp vegetable oil
### For the filling:
- 1 lb ground beef and pork mixture (70% beef, 30% pork)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup water
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp ground cumin
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
## Instructions
1. Make the dough:
- In a large bowl, mix flour and salt.
- Gradually add warm water and oil, kneading until you have a smooth, elastic dough.
- Cover and let rest for 30 minutes.
2. Prepare the filling:
- Mix all filling ingredients in a bowl.
- Refrigerate for 30 minutes to allow flavors to meld.
3. Assemble the khinkali:
- Roll out the dough on a floured surface to about 1/8 inch thickness.
- Cut out 3-inch circles using a cookie cutter or glass.
- Place a spoonful of filling in the center of each circle.
- Fold the edges up, pleating as you go, to form a pouch. Pinch the top to seal.
4. Cook the khinkali:
- Bring a large pot of salted water to a boil.
- Carefully add khinkali in batches, not overcrowding the pot.
- Cook for 8-10 minutes until they float to the surface and the meat is cooked through.
- Remove with a slotted spoon and serve hot.
